This refers to the viscosity of the oil. The first number is the cold weather viscosity, so a 5W-40 oil has been tested down to -35C and will not get thicker at that temperature than a "5". The 40 is the hot number, so a 5W40 oil would never get thinner than "40" as tested at 100C (approx running temp of your engine).
